A document written by the abbot in 1628 directly refers to the consumption of beer and wine by the monks. The last of the brewers to be a monk was Brother Pierre, up until the 1793 fire. In 1931 the present day brewery was built The first beer was shipped from the brewery on 7 May 1932, and was sold in barrels rather than the bottles of today. Orval was the first Trappist beer to be sold nationally around Belgium. Course One Mussels steamed in a spicy jalapeno-tomato broth served with pomme frites and sauce Rochefort 10 Brasserie de Rochefort 11.3 % abv Reddish-brown colour, with a very compact head and an aroma of figs, feels like honey in the mouth.. The brewery is located inside the Abbey of Notre-Dame de Saint-Rémy, near the town of Rochefort, and has been brewing beer since 1595. There are approximately 15 monks resident at the monastery. The monks are very secretive about the brewing process and the brewery is not open to the public, therefore much of the information publicly known about the brewery comes from only a few sources. www.wikipedia.org Course Two Braised Bruxelles short ribs server over pan roasted Winter vegetables Chimay Blue www.chimay.com 9.0% abv The Chimay Blue Cap, “baptized’ “Grande Reserve” is a dark Trappist beer with a powerful aroma, the complex flavour of which improves across the years. It was first brewed as a Christmas beer, explaining the presence of a “vintage”. This authentic Belgian beer, whose tinge of fresh yeast is associated with a light rosy flowery touch, is particularly pleasant. Its aroma, perceived as one enjoys it, only accents the delightful sensations revealed by the odour, all revealing a light but agreeable caramelized. The Cistercian Trappist monks of Chimay have, since 1862, developed the production of Belgian beers and Trappist cheeses that, thanks to their character and their qualities, found and continue to find great suc- cess. Westmalle Dubbel www.trappistwestmalle.be 7.0% abv Westmalle Dubbel is a dark, reddish-brown Trappist beer with a secondary fermentation in the bottle. The creamy head has the fragrance of special malt and leaves an attractive lace pattern in the glass. The flavour is rich and complex, herby and fruity with a fresh-bitter finish. It is a balanced quality beer with a soft feel in the mouth and a long, dry aftertaste. Since 1856 the monks have also been brewing a dark Trappist beer along with their table beer. Since the recipe was modified in 1926, they have been brewing slightly heavier beer. This is the foundation of today’s Dubbel. Course Three Mango Chocolate Indulgence served with La Trappe Quadrupel Koningshoven, Holland A unique Trappist beer that is even put to rest sorted by year in the cellars of the abbey for further fermentation. The 10% abv strongest beer of La Trappe with a beautiful amber colour. The warm taste is full and well-balanced. A little bit sweet and pleasantly bitter.
