Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Apple Cider Butter 6 lbs flavorful cooking apples 1 cup cider or sweet mead 1/2 cup frozen apple juice concentrate (undiluted), or strong fresh cider cheesecloth bag 1 tsp whole cloves 1 tsp whole allspice pinch of salt 1 1/2 cups granulated sugar 1 1/2 cups firmly packed brown sugar juice and finely minced zest of 1 lemon 4 thick cinnamon sticks 1/2 tsp nutmeg Peel, core, and thinly slice apples. Place with cider and apple juice in a heavy 6-quart Dutch oven. Cover and simmer slowly until apples are tender. Using a potato masher or back of a large spoon, lightly mash until you have a 60-to40 ratio of mashed to chunky pieces. Tie cloves and allspice into cheesecloth and add apples along with salt, sugars, lemon juice, cinnamon sticks, and nutmeg. Stir and slowly bring to a rapid boil. Lower to medium. Cook, stirring constantly, until apple butter falls in a sheet from a metal spoon. Remove and discard cinnamon sticks and spice bag.
