Cooking With Beer

Blue Cheese Salad Dressing
3/4 cup mayonnaise
3/4 cup sour cream
1/2 cup finely crumbled blue cheese
1/3 cup dry mead or still cider
1 shallot, finely minced
2 scallions, white only, finely minced
2 to 3 drops Louisiana hot pepper
2 tsp balsamic vinegar
Combine all ingredients and refrigerate two hours before serving.

ENZYME - NOT BEER - IS BLAMED FOR BELLY

Although the cure won't come in time for this holiday season's weight
creep, Boston scientists think they have come up with information that
could lead to a new way to reduce the mostly male problem known as beer
belly.
Researchers at Beth Israel Deaconess Medical Center have identified a
specific enzyme in fat cells that causes them to cluster around the
abdomen. Mice with excessive amounts of this enzyme look like the rodent
version of Homer Simpson.
If drug companies can create medications to turn off this enzyme, the
researchers say, it might help men lose abdominal fat.
Paring down that paunch has implications far beyond male vanity. The kind
of fat that sticks around the abdomen, creating a beer belly, is the kind
most associated with a higher risk of diabetes, high blood pressure, heart
disease and certain forms of cancer, researchers say.
Dr. Jeffrey S. Flier's study found that increased activity of a particular
enzyme, called 11 beta HSD-1, in fat cells triggers an overproduction of
the hormone cortisol. Fat cells with an increased amount of this hormone
tend to park themselves in the abdominal area.

Rauchbier -
A smoky-flavored lager made around Bamburg and Franconia, Germany, produced
with malt that has been wood-smoked. Another more dramatic way to make
rauchbier is to heat rocks over a wood fire until they are red hot, then
plunge them into the boiling wort. A Scottish-style smoked beer is made
with malt that is kined over burning peat. Some American microbrew sell
peat-malted beer.
