Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Welsh Rarebit 1/4 cup unsalted butter 3/4 cup brown or pale ale 2 extra-large egg yolks 1 1/2 Tbsp Dijon mustard 1 Tbsp A-1 Sauce 1/2 to 1 tsp Louisiana hot pepper sauce 10 oz quality cheddar cheese, grated at room temperature 2 Tbsp flour * In a heavy saucepan heat butter over medium-low heat. * Whisk together remaining ingredients except cheese and flour. * Pour into hot butter and heat until very hot but not bubbling, stirring constantly. * Toss cheese with flour. Add one handful at a time to the hot beer mixture. Stir slowly and in one direction only. * When smooth and glossy, remove from heat and serve with slices of fresh French bread and pickled vegetables. Welsh Benedict 2 English muffins 2 tsp butter 4 thick slices Canadian bacon 4 poached eggs kept warm in hot water 1 batch Welsh Rarebit with 1 tsp minced orange zest added * Lightly toast and butter muffins. Saute bacon briefly. * Place bacon on buttered muffins, top each with a poached egg, and ladle the orange-enhanced Welsh Rarebit over the top. * Garnish with thin slices of orange and serve immediately. Fritz Schramma was caught in a pub in Cologne's rival town, Duesseldorf, drinking its Alt beer. Competition between Duesseldorf's dark Alt and Cologne's light Koelsch is at the heart of the cities' traditional rivalry. Schramma has admitted he frequently goes to Duesseldorf to drink Alt. He said: "But we'll keep that to ourselves, won't we?" The story then appeared in the Express newspaper. The paper called Mr. Schramma's choice of drink a "sin" that has caused "pain to the Cologne soul".
