Region of Origin: Norway, Scandinavia Style: Bock Alcohol Content: 5.2 abw (6.5 abv) To ask for an Aass might embarrass (or amuse) English-speakers. Properly pronounced to rhyme with "horse," Aass means "summit" in Norwegian, and in this instance is a family name. This lager brewery is in an old port town called Drammen, near Oslo. The beer is a dark-brown lager in the strong style known as Bock. It has a sweet, malty aroma, almost like that of licorice toffee, and a very smooth creaminess. At the brewery, the malt meets mountain water using traditional techniques: a process called double-decoction; an unusually long boil; and five to six months' lagering (cold maturation). Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Beer Crab Boil 2 bottles beer 1 cup vinegar 2 dozen crabs 1 cup Old Bay seafood seasoning 1/2 cup salt * In a large seafood steamer, pour in beer and vinegar. We recommend a porter or stout; however, for a lighter flavor, you might want to try some other very flavorful beer. Some people like wheat beer because it imparts a uniquely sour taste. * Preheat the steamer for 5 minutes. Layer the crabs in the steamer, covering each layer generously with Old Bay and salt. Continue this process until all of the crabs and seasonings are used. * Steam for 20 minutes or until all of the crabs on top are red. (The Everything Beer Book, Carlo DeVito) Like this recipe? The university started a two-year trial ban in 1996 to curb alcohol abuse and violence. The ban was extended indefinitely in 1998. Before sales were halted, CU was the only school in the former Big Eight athletic conference -- now the Big 12 -- that sold beer at football games.
