Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Piquant Beer Beef Jerky 1/2 cup light soy sauce 1/4 cup porter 1/4 cup brown sugar 2 tsp whole black peppercorns, freshly ground 1/2 to 1 tsp red chili flakes, coarsely ground 1 1/2 tsps onion powder 1 tsp Chinese 5-spice powder 3 cloves garlic, minced and mashed 4 lbs beef, fat removed, cut in long strips with the grain * Combine all ingredients except beef in a bowl, mix thoroughly. * Make sure every bit of fat has been removed from meat. Rub with beer mixture, coating thoroughly. * Layer strips of meat in deep bowl or crock. Place a plate and heavy weight on top. Allow to stand in cool place or refrigerate 8 to 18 hours. * Drain and lay strips in smoker or hang over a smoky fire. Smoke over low heat 3 to 4 hours.
