Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Red Orange Sage Marmalade The Black Rabbit Restaurant, Edgefield Manor, Troutdale, OR 2 tbs clarified butter 1 med red onion, juilienned 1/2 cup light ale 1/4 cup brown sugar 1 tbs chopped fresh sage 1 tsp caraway seeds 1 tbs mustard seeds 1/2 lb Black Forest ham 2 ozs gruyere cheese 4 slices dark beer bread * Prepare red onion sage marmalade: melt butter. Cook onion in butter over low heat until caramelized. Add ale and brown sugar. Reduce until thick. Add sage, caraway, and mustard seeds. Heat thoroughly. * Divide ham and cheese evenly on two slices of bread. Top with marmalade and remaining bread. Grill until cheese is melted. A recipe for egg ale calls for the gravy of 8 pounds of beef, 12 eggs, a pound of raisins, oranges and spices to be placed in a linen bag and bag and left in a 12-gallon barrel of ale until the ale has ceased fermenting.
