Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Beer Cheese Spread 6 oz cream cheese, softened 6 oz blue cheese, softened 12 oz sharp white cheddar cheese, grated 1/4 cup minced green onions 1 tsp paprika 1/2 tsp celery seed 1/2 tsp ground black pepper 1/2 tsp Tabasco sauce 1/2 cup full bodied ale * Combine all ingredients except beer in the bowl of a food processor or electric mixer. Mix or blend until all is mixed well. * Slowly add beer while processor or mixer is running. Place mixture into a crock or serving bowl and chill until firm. Extra police were called in because of fears English soccer fans traveling to matches might run amok, the Belga news agency reported. Ostend is the arrival point in Belgium for passenger ferries from Dover. England was eliminated from Euro 2000 on Tuesday causing relief for Belgian officials. English had been involved in rowdy behavior in both Brussels and Charleroi. (BEERWeekTM Week of June 26 - July 3, 2000) * Eastman Chemical Co. reported a new molecule that has been developed that will color plastic a shade of amber allowing plastic beer bottles to protect the beer from harmful sunlight. The new molecule, called AmberGuard, could help bring plastic beer bottles into the mainstream, since glass is so much more expensive than plastic containers. Beer was typically delivered to pubs and other retail outlets in stout drays, and some breweries use them still as a means of carrying on tradition. Since the invention of motor vehicles, drays have become less prominent, although they still exist. The Youngs Ram Brewery at Wandsworth, London, is a well known example of a brewery that still uses drays. Delivering heavy casks of ale is a hard job, and draymen worked up quite a thirst. Breweries provided for that thirst by giving daily allotments of ale to their workers, a tradition that continues to this day. (The Encyclopedia of Beer. Christine P. Rhodes, editor)
