Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Smoked Chicken Nachos with Beer Cheese Sauce Bluegrass Brewing Co. - Louisville, KY 1 cup chicken broth 1 cup red ale 1/2 cup whole milk 1 tbs vegetable seasoning 1/2 onion, diced small 2 jalapenos, diced small 1 tsp pureed or granulated garlic white pepper to taste 1 1/2 lbs American cheese, sliced 1/2 cup cold water 1/2 cup cornstarch * In a large pot combine chicken broth, beer, milk, seasoning, onion, jalapenos, garlic, and pepper. Simmer for 15 mins over very low heat add 1 slice American cheese at a time, whisking constantly. Remove from heat when all cheese is melted. * In a separate bowl, whisk together the cornstarch and water. Add cornstarch mixture in a slow stream to the beer cheese sauce. Add just enough cornstarch mix to bring sauce to a nice consistency. * When prepared, add to the top of your favorite Nachos setup... "... further expansion is impossible unless we restore the domestic supply of barley and hops," said Vyacheslav Mamontov, Executive Secretary of the Russian Union of Beer and Non-Alcoholic Drink Producers. Russia imports about 70% of its malt needs and almost all of its hops. (BEERWeekTM June 12-19, 2000) * A Common Council committee in Green Bay, WI plans to seek a state-wide $1-2 per barrel tax on beer to fund renovations needed at Lambeau Field, home of the NFL Green Bay Packers. A 1/2 cent local sales tax increase was originally proposed. The beer tax was considered as an alternative that would spread the stadium cost throughout the state. The public's $160 million share of the $295 million refurbishment will be met by one of the plans. * Corona Extra, the No. 1 import in the U.S., will be available in cans for the first time this summer. The can will have a "wide mouth" opening to accommodate the lime wedge that is often served with Corona. (BEERWeekTM June 12-19, 2000) * Party-Master is a new type of keg tapping system which is small like a hand pump, but uses CO2 like a professional bar system. The Party-Master fits all sizes of kegs and uses compressed CO2 to force the beer out of the keg. A hand pump uses air pressure to push the beer out. The medieval church, never at a loss for creative methods of fund-raising, used public thirst to inspire generosity. These drunken revels, which were held on consecrated ground, became so popular that reformers were scandalized. Despite the opposition, the practice of conducting church ales continued for centuries.
