Did You know? ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Chichi: The most common corn-based beer brewed by Native American women from the American Southwest through Latin America. A sacred brew, chichi is made in small, village breweries and served in quart glasses, traditionally along with roast guinea pig. Ranging in color from pale yellow to deep red or purple, most chichi is fermented for 48 hours before undergoing a secondary fermentation in clay pots buried in the ground. Inca custom dictated spilling the first few drops on the ground as an offering to the goddess Mama Sara. (The Encyclopedia of Beer. Christine P. Rhodes, editor)
