Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Mussels in Belgian Ale Sam Barbieri, Waterfront Ale House, Brooklyn , NY 2 shallots, diced fine 2 tbs olive oil 1/2 cup fennel bulbs, sliced thin 1 quart mussels, cleaned 8 ozs Belgian Ale (white or pale) 1 plum tomato, peeled, seeded, and chopped 2 tsps lemongrass, chopped 1 bay leaf 2 tbs garlic butter 1/2 lime, juice only salt and pepper * Saute shallots in olive oil until transparent. Add fennel and saute until slightly soft. Add mussels and ale and bring to a boil. Add tomato, lemongrass, and bay leaf. Lower heat, cover, and cook until mussels open. Remove mussels to a large bowl and keep warm. Return broth to a boil and whisk in the garlic butter and lime juice. Season broth to taste with salt and pepper. Pour sauce over mussels. Serve with crusty French bread and a Belgian Ale. The suit was brought by former senior brewer Bernd Naveke who was forced to retire at age 40 after 20 years as a Brahma employee because of his drinking problem. Naveke was awarded approx $30,000 in damages and a lifetime pension of about $2,600.00. The court stated that Naveke was not warned about the risks of his profession and Brahma did not conduct sufficient medical tests. Brahma has challenged the ruling. (BEERWeekTM Week of March 27 - April 3, 2000) * Anheuser Busch announced that it will be releasing a lemon flavored malt beverage on May 1st. The new beverage will be called Doc Otis and will feature narratives on each bottle about the fictional character Doc Otis who is represented as a 1880s western personality. The beverage will be made with real lemon juice to make it pleasantly sweet, yet tart enough to appeal to adults. (BEERWeekTM Week of March 27 - April 3, 2000) * The Ohio Division of Liquor Control has banned the label for Manneken Pis beer because it was deemed "offensive and not in good taste", according to a Paulaner North America and Intermountain/RKH press release. The label portrays a statue of a little boy urinating. Manneken Pis has been one of Belgium's best selling beers and the statue is one of Brussels' oldest landmarks and is considered its official mascot. (BEERWeekTM Week of March 27 - April 3, 2000) * Labatt USA announced the opening of its first national training center, The Beer Academy, in Manchester, HN. The academy will be a training center for wholesalers, retailers, on-premise wait staff and Labatt USA employees to learn more about imports and specialty beers. The 21 Labatt brands will be featured as lesson material. The academy will not be open to the public. (BEERWeekTM Week of March 27 - April 3, 2000) Did You know? ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Ale-Stake: A broom or stick originally placed upright in front of an alehouse to advertise "ale for sale". In some places, the broom or stick was found over the door. Eventually, the ale-stake, instead of being placed flat against the building, was set perpendicular to the building. Before long, someone thought of hanging a sign from the ale-stake. The symbolic connection between the broom and the brewster survives today in Latin America and Africa. In the late 1400s, English law required the ale-stake to be removed from sight when no ale was available for sale. Permanent display of this sign indicated a commercial enterprise. The stake indicated to the public that ale had been freshly brewed at that location. The practice dates back to Saxon times. (The Encyclopedia of Beer. Christine P. Rhodes, editor)
