Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Lovely Lambic Salad Dressing 2 tsps Dijon mustard 1/4 cup wine vinegar 1/2 cup Lindeman's Framboise Lambic or other raspberry lambic 1/2 cup olive oil 2 tbs oregano, chopped parsley, marjoram, and thyme 1 clove finely minced garlic 2 tbs freshly squeezed lime juice salt and pepper to taste * Mix all ingredients in a bowl or food processor. * Store leftovers in a cruet or a clean, used salad dressing bottle * This dressing will keep indefinitely in the refrigerator, but olive oil tends to solidify at cold temps. Ever notice the cloud that appears in the neck of a beer bottle when the cap is removed? It is a real cloud, just like outside! The airspace in the unopened bottleneck contains carbon dioxide and water vapor. Because the inside pressure is approximately twice air pressure at sea level, when the cap is removed, the gases and vapors expand rapidly. This decompression causes a precipitous drop in temperature within the neck of the bottle. This instantaneous drop in temperature causes the water molecules to become so sluggish that they become nucleation sites for water droplets (or condensation) the same way that clouds form in the sky. In 852 AD, the abbot of Medeshampstede, present day Peterborough, rented some land at Sipmpringham to Wulfred. One of the conditions of the lease was that Wulfred should each year deliver to the cleric 2 tuns of pure ale and 10 mittans (measures) of Welsh Ale. Ale was frequently the form of payment for tolls (called tollester) charged by lords.
