Irish Beef and Guinness Casserole 2 tbs oil 2 lbs rib steak, boned and cut into cubes 2 onions, thinly sliced 2 cloves garlic, chopped 1 tbs 1 tbs soft dark brown sugar 1 tbs plain flour 1/4 pint Guinness stout 1/4 pint water bouguet de garni 1 tbs red wine vinegar 1 tbs Dijon or other French mustard pinch of ground cloves salt and pepper to taste 1/2 lb broccoli florets or cauliflower (preference) Set oven to 325 degrees. Heat the oil in a frying pan. Brown the beef, a few pieces at a time. Remove the meat as it browns to a casserole. Add the onion and garrlic to the pan and cook for a few minutes. Sprinkle in the sugar and flour, stir it around to soak up the juices, then gradually stir in the Guinness and water, stirring all the time. Add the bouquet de garni, wine vinegar, mustard, ground cloves and seasoning. Bring to a boil and pour it over the meat in the casserole dish. Put the lid on and cook in the oven for approz 1 1/4 hours or until the meat is tender. Approx 20 mins before the end of cook time add the broccoli and cauliflower to casserole. Serve with baked potatoes or whole wheat bread and a salad. Boehm was the founder of Sterling Publishing Co., the original holder of Guinness book of Superlatives contract. The Book of Superlatives, which later became the Guinness Book of World Records, was originally created to settle barroom arguments. It used to be brewed with malt, a small quantity of hops, flour, spices and grout (also called ripening). As there are different recipes for grout, these ales varied considerably.
