Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Carbonade Flamande 1 1/2 lbs beef boneless chuck or round steak 1/4 lb bacon 4 med onions, sliced 1 minced clove garlic 3 tbs flour 1 cup water 16 oz lambic, stout, or brown ale 1 bay leaf 1 tbs packed brown sugar 1 tbs Dijon mustard 2 tsps salt 1/2 tsp dried thyme leaves 1 tsp fresh ground pepper 1 tbs fresh ground pepper 1 tbs red wine vinegar parsley, chopped cooked pasta * Cut beef into 1/2 inch strips. Cut bacon into small pieces and fry until crisp. Remove bacon from pan. Pour off bacon fat and reserve. Saute onions and garlic in 2 tbs of the bacon fat until tender, about 10 mins. Remove onions. Cook beef in remaining bacon fat until brown, about 15 mins. Stir in flour to coat beef, and gradually stir in water. Add onions, beer, bay leaf, brown sugar, mustard, salt, thyme and pepper. Add just enough water to cover beef, if necessary. Heat to boiling, then reduce heat. Cover and simmer for 1-1/2 hours, until beef is tender. Remove bay leaf. Stir in vinegar, sprinkle with bacon and parsley. Serve over pasta. The Zhaoqing Noble Brewery in China's Guangdong Province brews the lager under license. China is the second largest beer market in the world after the United States and is expected to become number one in this decade. (Beerwire 21.1 Feb 4, 2000) * Tens of thousands of grasshoppers infest Uganda each December following the rains. In the capital of Kammpala residents gather each night under streetlights to catch the insects. Once stripped of their legs and wings the grasshoppers, high in protein and carbohydrates, are fried as a snack. The locals say that they taste best with beer. (Beerwire 21.1 Feb 4, 2000) * The Paulaner Keller, the Paulaner Brewery's century old beer hall in Munich was destroyed by fire last November, causing $12 million in damages. The Paulaner Keller is the sight for Munich's annual SalvatorFest. Arson was suspected as the cause of the fire. The new graphics feature a bolder, starker looking logo, and the name "Guinness" is portrayed in tall, stenciled lettering. In pharaonic Egypt, beer to nourish the ka, the spirit of the dead, could appear in the form of a pictorial representation on the tomb wall. In some cases, even miniature wooden breweries and brewsters were placed within the tomb. The oldest beer vessels found in tombs still containing traces of brew date to 8,000 years ago. Some cultures, such as ancient Egypt, provided special beers as offerings to the gods who would sit in judgement of the soul of the deceased. The ritual pouring of beer on graves and the offering of opened containers of beer to the thirsty spirits of the dead remains common throughout Africa, South and Central America, and Asia.
