Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ French Onion Soup 1/4 cup butter 4 med onions, sliced thinly 1/4 cup olive oil 2 tbs brown sugar 6 cups beef broth 22 oz pilsner 1 oz brandy, burgundy wine, cognac, sherry, or dry white wine 1 tbs fresh thyme (or 1/2 tbs dried thyme) salt and pepper 1 tbs Worcestershire sauce 1 tbs Dijon mustard sliced French bread fresh grated parmesan or romano cheese * Melt butter in a large sauce pan. Add olive oil and onions and saute over medium heat until onions are translucent. Add brown sugar and cook, stirring often, until onions turn brown. Add broth and continue to stir, scraping bottom of pan. Add pilsner, wine, thyme, salt and pepper to taste, Worcestershire sauce and mustard, Bring to a boil. Reduce heat to simmer, cover and cook for one hour. Skim foam off top. * Broil slices of French bread until toasted on both sides. To serve, pour soup into bowls, filling them 3/4 full. Add a slice of toasted bread and top with cheese. Place bowls on a cookie sheet and broil until cheese is slightly brown and melted. A-B contracted five full minutes of advertising time, more than any other Super Bowl advertiser. The average Super Bowl advertiser spent $2.2 million for a 30-second spot during the game. For example, in Berkshire, England, after a Christmas Eve church service, the parishioners who were able to pay the tithe retired to the vicarage and were entertained there with ale, bread and cheese. This was not considered a benefaction from the vicar but a right of the tithe payers. The vicar was required to brew 4 bushels of malt in ale and small beer and to provide 2 bushels of wheat for bread and half a hundredweight of cheese. Whatever remained unconsumed was given to the poor. Variations of this custom could be found in every parish throughout Great Britain in the mid 1800s. (The Encyclopedia of Beer. Christine P.
