Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Three-Bean Chili for a Crowd 4 tbs olive oil 2 large chopped onions 12 large cloves minced garlic 5 tsps ground cumin 4 tsps dried oregano 2/3 cup chili powder 2 tsps cayenne pepper 2 green peppers 1 red pepper 3 large tomatoes 2 1/2 cups marzen lager, mixed with 1/3 cup cornmeal 2 cups canned beef or vegetable broth 2 16-oz cans drained kidney beans 2 16-oz cans drained black beans 2 16-oz cans drained pinto beans salt and pepper to taste sour cream, cheddar cheese, cilantro (all optional) * Heat oil in a large pot over medium heat. Add onions and cook until clear. Lower heat and add garlic, cumin and oregano. Cook for 5 more minutes. Add chili powder and cayenne and cook for 1 minute. Add peppers and saute for 3 mins. Add beer, broth, beans, and tomatoes. Simmer stirring frequently for 40 mins. Add salt and pepper to taste. Serve with sour cream, cilantro, and cheddar cheese as garnish. The event will feature many beer industry professionals and consumers celebrating Michael's ten years of tutored tastings as part of Philadelphia's Book and the Cook and his contributions to the world of beer. Proceeds will benefit the work of the Sumerian Dictionary Project of the Univ. of Pennsylvania Museum. Sumerian tablets with the earliest known commercial beer transactions (3400 BC) will be on display.
