Add the fresh yeast and let set for 5 mins. Add the rest of the ingredients and mix or knead for 8 mins using flour to dust as needed. Put in an oiled bowl and let rise for 1 hour in a warm place until doubled in size. Preheat oven to 325 degrees. * Grease 4 loaf pans. Punch down, shape, and divide into four balls. Reshape into ball shapes. Put into greased pans and let rise until doubled in size. Bake in a 325 degree oven for 45 minutes. The German word "stein" means stone. Today, these large capped flagons serve mostly a ceremonial purpose, but their design originated to perform a serious function.
