Sanitation used to be nonexistent and water was dangerous to drink. Small beer was made from the final runoff of the brewer's mash. The first run beer would usually be a Dubbel or Tripel or strong ale. The second run would be ordinary beer, and the final run the small beer. It was around 2.5% abv and was probably very dark and consumed quickly after a short brewing cycle. The Belgian single beer and the German schankbier are two other examples of this type of beer.
