Don't forget to check out the calendar of events on our website for promos in upcoming weeks: http://www.tacomac.com/cgi-bin/calendars/tacomac/WebEvent Cooking With Beer ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Seafood Stew 1 lb monkfish, boned & cut into cubes 1 lb sea scallops 1 lb mussels, shelled 2 tbs butter 2 cps thinly sliced leeks 1/2 cup minced shallots 1 cup shredded carrot 1 cup thinly sliced celery 1 tbs cognac1 ½ cps heavy cream 2 cps Belgian White Beer (Hoegaarden or Blanche de Bruges) salt and white pepper Garnish: 3 tbs minced parsley 3 tbs minced lemon zest * Clean seafood and set aside. Mussels should be rinsed and beards removed with needle nosed pliers. Monkfish should be skinned and boned. * Heat the butter in a 2 quart heavy saucepan. Saute the leeks , shallots, carrot, and celery for 5 mins. Over medium heat. Stir in the cognac and cream, and reduce the heat. * Simmer until vegetables are just tender, about 6 more minutes * Stir in the white beer and monkfish. Cook over medium heat, stirring often for 8-10 mins then add the scallops and mussels. Cook for an additional 507 minutes or until the shellfish are just cooked but still tender. Taste and adjust seasonings with salt and pepper. * Garnish with parsley and lemon zest, serve over buttered rice. Worldwide hop acreage was down by as much as 20% compared to last year, but prices have not risen due to a lower alpha content in this year's harvested crop. As a result, high alpha varieties have risen in price. Mildew spraying, which is necessary in hot weather, is said to be a contributing factor in the lower alpha percentage. (BEERWeekTM, vol 4, no.43) * After a meeting, the Institute for Brewing Studies decided it is going to pursue the development and promotion of "American Beer Month" simultaneously with the Brewers Guilds and other organizations around the US devoted to beer.
