1) Promotions 3) Cooking With Beer 3) In the News 5) Did You Know... 6) Beer Quote of the Week *********************************************************** Promotions: Sandy Springs - Thu, Mar 25th, 7:00 pm Grolsch "keep the glass" night Snellville - Fri, Mar 26th, 7:00 pm Grolsch "keep the glass" night **supplies will be limited so come out early! *********************************************************** Cooking With Beer Cheddar Pepper Wafers Inspiration for this recipe comes from the "cheese pennies" popular in the 1950's for coctail parties. 1/2 lb grated aged cheddar (white cheddar preferred) 1 tsp cayenne pepper 2 tbs butter 1 cup flour 1 tsp salt 1 cup pecan meal 1/2 tsp baking powder 1/2 cup India Pale Ale *Blend cheddar, pepper, butter, flour, salt, baking powder, and 1/2 cup of the pecan meal in the bowl of a food processor fitted w/a metal blade. Pulse on high speed twice, then add the pale ale. *Pulse until smooth, about 30 or 4 more turns. Place a piece of parchment paper 15 inches long on the counter top and sprinkle the remaining pecan meal. Use a spatula to scrape dough onto the parchment paper so the pecan meal coats the dough. Gather the sides of the paper together and roll to form logs about 2 1/2 inches in diameter and 10-12 inches long. Roll up the parchment paper and seal. Refrigerate until firm, about 2 hours. *Preheat oven to 400 degrees. Line a baking sheet w/parchment paper. Unwrap the dough. *Use a sharp serrated knife to cut off thin slices of the chilled cheddar dough log. *Place the cheddar wafers on the baking sheet for 12-15 mins, or until bubbly and golden. For the sixth year in a row Guinness imports is sponsoring this contest. This year the prize is J.O'Sullivan's pub in Newcastle west, County Limerick (about 150 miles southest of Dublin). The new, 200 bbl copper brewkettle just built is twice the size of the existing one. There are additional buildings which house the expanded fermentation capacity of some 500,000 barrels.
