Today in Aberdeen, N.C., nestled between the premier golfing towns of Pinehurst and Southern Pines, the brewery seeks to recapture the tradition and character of those hand-crafted ales. Their Scottish Brew Master has created some exceptional ales using the finest malts and hops. The 100 year old yeast and the pristine well water of the Sandhills surrounding Pinehurst Village give Double Eagle ales their world class quality and flavor. Their mission is to produce and market high quality microbrewed beer and become a major microbrewer in the southeast. The 8500 square foot brewery is housed in a new building specifically designed for brewery operations and is located on a seven acre site along NC Hwy 211 East, seconds from the heart of Aberdeen. The brew house consists of a 20 barrel mash/lauter tun, 20 bbl kettle and 60 bbl cold and conditioning tanks and a 40 bbl bright tank. A modern high speed bottling line has also been installed which is capable of packaging over 3000 bottles of beer an hour. Double Eagle Scotch Ale - New on Draft at both locations The scotch ale is quite complex but still accessible to a wide palate. It is brewed using a blend of four malts (Pale, Amber, Cara-pils, and Black) with torrified wheat, oatmeal and roast barley. It is full bodied, almost chewy, with a silky, roasty palate with hints of berry jam, cedar, toffee and chocolate. Hop aroma in this beer is quite subdued with the malt being the dominant source of aroma. However, the level of bitterness is significant in this beer with the contributing hops being Willamette, Nugget, and Styrian goldings. The effects of this combination with solid palate provided by the grist load is almost bittersweet. Although there are no residual fermentable sugars present, the power of the malt base finishes sweetly on the palate. Visit the Pinehurst Brewery Website http://www.pinehurstbrewery.com/ *********************************************************** Cooking With Beer In honor of our Guinness Pint Night, here is a recipe from John Zenger, River Place Hotel, Portland, Oregon: Guinness-Sauced Lamb Sausage On Tomato Fettuccine 1 pound lightly spiced lamb sausage, sliced or diced 2 tbs shallots, minced 1 tbs garlic, minced 1/2 pound sliced button mushrooms 3/4 cup Guinness 2 1/2 cups heavy cream 1/2 log Montrachet goat cheese 1 pound fresh tomato fettuccine 6-7 fresh mint leaves Brown the sausage over medium heat, until fully cooked. Remove all but a tsp of the fat, and add the shallots, garlic, and mushrooms. Sweat until they are wilted but not colored. Remove the shallots, garlic, and mushrooms and set aside with the browned sausage. Deglaze the pan with the Guinness and reduce to almost a syrup. Return the sausage, shallots, garlic, and mushrooms to the pan and add the heavy cream. Crumble the cheese into the cream. Stir until melted. The cheese will thicken the sauce without having to do a second reduction. Bring a pot of water to a boil and cook fettuccine. Serve the sauce over fettuccine and sprinkle with freshly chopped mint leaves.
