Since we are featuring our new Stone Beer this week, we thought you may want to try out this great recipe. This recipe comes from: Andy Finestone Boscos Pizza Kitchen and Brewery Germantown, TN (1) medium onion, chopped (2) stalks celery, chopped (1) red bell pepper, chopped (5) strips smoked bacon 1/4 cup olive oil (2) quarts chicken stock (1) pint of stone beer (2) cups of heavy cream (1) teaspoon fresh thyme (2) tbs Tabasco (1) tbs Worcestershire sauce salt and pepper to taste (8) ounces sharp yellow cheddar cheese (2) ounces bleu cheese Saute onion, celery, pepper, and bacon in olive oil. Drain off the oils and add stock, beer, and cream. Bring just to a boil. Add the remaining ingredients.
